I want to monitor the water level in a well or bore, the Senix Ultrasonic Level Sensor won't work... what other options do I have?

A 4-20mA, two wire loop powered pressure sensor/transducer.
Overview
A pressure sensor with 4-20mA output can be used to monitor the pressure at the bottom of your well or bore. Translating pressure to depth can provide a water level measurement.
In terms of recommended brands or models, Observant don't officially have a favoured sensor but we have in the past seen success with :
- VersaLine® Series Depth/Level Pressure Transmitters
- Keller - Acculevel
- Dwyer - SBLT2
- Seametrics - EcoPRO / PS98i
